Irish Soda Bread

Quick Bread for St. Patrick's Day

Ingredients

  • 1 cup Flour
  • 1 tbsp Flour for currants
  • 1 tsp baking soda
  • tsp kosher salt
  • 4 tbsp butter cold, cut into small cubes
  • cups buttermilk
  • 1 tsp grated orange zest optional
  • 1 cup dried currants (can use raisins instead)
  • 1 large egg

Instructions

  • Preheat the oven to 375℉
  • Combine the flour, sugar, baking soda, and salt in a bowl.
  • Add the butter to the flour mixture slowly.
  • Mix the buttermilk, egg and optional orange zest.
  • Add the buttermilk mixture slowly to the flour mixture.
  • Mix the currants or raisins with the flour.
  • Add the currants into the mixture.
  • Place the dough onto a floured board or floured pastry board.
  • Knead the dough a few times.
  • Put the loaf on a baking sheet covered in parchment paper.
  • Cut a large X in the top of the loaf with a serrated knife.
  • Bake approximately 55 minutes.
