Grandma’s Lime Jello

A sweet side salad that doubles as a dessert.

Ingredients

  • 1 pkg Family size Lime Jello mix
  • 4 large marshmallows
  • 1 cup heavy whipping cream whipped
  • 2 cups pineapple juice
  • 20 oz crushed pineapple drained
  • 1 cup cottage cheese

Instructions

  • Follow the directions on the jello as to how much hot water you need.
    Should be 2 cups.
  • Bring that to a boil.
  • Add Jello. Stir until dissolved.
    Do not add the cold water it calls for.
  • Add the marshmallows and stir until they are dissolved.
  • Put it in the fridge for 1-2 hours. DO NOT LET IT SOLIDIFY. It won’t mix properly then.
  • Pull your syrupy jello out of the fridge Mix in the cottage cheese, pineapple (drained), and pineapple juice.
  • Use your mixer to whip your heavy whipping cream. Approximately 5 minutes. You want it to have the consisitancy of whipped cream.
  • Fold in the heavy whipping cream.
  • Chill
